Top Chef - Partying in South Beach

Didn't blog on last week's episode, where Joey was sent home after he and Hung failed to sell a single freeze-dried prepared dinner - despite the fact the meals were free!

So, this week, we're down the final nine contestants - and the promos have been hinting at a night out on the town in South Beach - an evening interrupted by an elimination challenge.

Quickfire Challenge:

Govind Armstrong from Table Eight in LA is this week's guest judge. The Quickfire includes Coldstone Sweet Cream Ice Cream - make a sauce to mix in with the ice cream. This one sounds fun - and a little less complex than previous challenges.

Hung is making FOAM!! Didn't he watch last season and how Marcel's foam became a joke by the end?

Favorites - Howie & Dale - with Dale winning immunity! Finally!

Elimination Challenge is delayed - Padma tells the chefs they get a chance to enjoy Miami nightlife. The limo arrives and takes the gang dancing - oh but wait, there's Padma on the red carpet in front of a cluster of catering trucks. The club is Nicki Beach, one of Miami's hottest nightspots. The group will be split into two teams - and they'll be cooking for the late night bar crowd. Dale gets the night off and gets to have dinner with the guest judge at his Miami restaurant.

Team Black - Brian, Tre, Hung and Sara M.
Team Orange - CJ, Howie, Sara N and Casey

The Orange team appears to be disorganized and leaderless. A panic settles in - CJ is trying to calm down the "spastic" energy. Chef Tom stops by to check out the menus and how the teams are proceeding. Surprisingly, he thinks Team Orange may be in better shape as they've developed a late-night menu while Team Black's decision to include a raw bar may be too much in the middle of the night.

When the drunks arrive, the Orange team seems to disintegrate pretty quickly. Sara and Howie seem to be melting down. Meanwhile, the Black Team is running on all cylinders. The drunks in the crowd give mixed reviews.

Judge's Table-

The consensus is Team Black made impressive menu and the crowd enjoyed the service and the accessibility of the food. The winner if Tre's grits with bacon. He wins a copy of the cookbook and a premium card to Nicki Beach nightclubs around the world.

Orange Team gets called in to be told they were the weaker team. Casey & Sara both disliked this challenge and said they were demoralized. Casey talks about her dishes, Howie's cuban sandwiches weren't great, Sara's burgers were underseasoned. Why didn't CJ take a leadership role? Howie calls Sara useless and the "baby of the team." Howie seems to be willing to throw everyone/anyone under the bus to protect himself.

Top Chef - Timing is Everything

Last week, it was Camille who heard Padma utter the dreaded words, "Please pack your knives and go." Who will it be this week? We're down to eleven contestants yet no one has emerged as a clear-cut favorite - despite Tre and Hung's early proclamations about their culinary skills.

Quickfire Challenge:

This week's Guest Judge is chef & owner of the French Bakery Cafe, Maria Franken.
The theme of the quickfire is "timing" - use the frozen pie crust any way you can in 90 minutes.

Hung is doing a chocolate banana pie - but it's not setting. Oh, this is delicious when things don't go well for Hung. His pie is runny. He thinks it "tasted delicious."

Worst - Lia, Dale and Hung. (turns out Hung is the only one who thinks his dish is tasty)
Favorit - Tre, Sara M and Joey - the winner of immunity is Joey! (and he thought he was on the cutting block at the beginning of the day)

Elimination Challenge:

The group will be cooking for the cast and crew of a Telemundo show and cater a latin-flavored lunch menu.

There is plenty of time (3 hours) to prepare today's meal. Everyone seems relaxed. Chef Tom comes in and says - "Change of plans, everyone. You only have 1.5 hours to get this done." Well, that's a nice twist and a sense of panic settles into the kitchen. People are running - Casey says it's dangerous with hot pans and sharp knives. Stress and Howie don't mix. Lia and Casey seem to have made appropriate adjustments. Lia says "this is what happens." Hung is frantic. Chef Tom is concerned about how Hung runs around the kitchen. Howie didn't make the appropriate adjustments.

The set is actually on "Star Island" - where all the fancy people live. And the crowd comes for lunch. The dishes look good. Hung speaks in Spanish, and "they're loving it!" Casey: "It's Hung being Hung."

Howie describes Joey's dish as "delicious." Has Joey hit his stride this week?

The case loves Sara M's chile relleno. Howie's braised pork works as well! They didn't like the polenta or Casey's coffee chicken dish.

Judge's Table:

The favorites are Joey and Howie. Joey talks about how he learned from some of his staff back home as to how he developed this meal. Howie says the timing caused him to worry. The winner of the challenge is Howie. This makes him the first repeat winner of the season. Is he now the favorite?

The worst chefs are sent into the room - Lia, Casey, Hung and Sara N.

Hung has no idea why he's here. Is it because it was it was too classic? Hung is pissed. Chef Tom asks Hung to be careful in kitchen. Casey didn't like her rice, but did like the coffee molasses. Lia thought she was trying to move a little beyond the latin flavor - which is why she served polenta. Sara - what were you thinking calling guacamole as ceviche?

The Judges call Hung arrogant - and want to tell him how "UNPERFECT it was." Sara's dish was more of an appetizer. Lia's was mushy and not balanced. It wasn't good or presentable. Casey's was dry, overcooked and the sauce was like "cough syrup."

The Final Decision: Sara mischaracterized the dish. Hung missed the mark. Casey's dish was cooked improperly. Lia's tastes were bland.

Top Chef - Back "Four" More

Since I missed last week's episode, I've got two fresh hours (to me) of my favorite reality series, Bravo's Top Chef. This week, we're looking at the top dozen. Who will be asked to pack their knives tonight?

Top Chef - Episode Four

It seems no one is missing Micah...was she less popular than Hung?

Quickfire Challenge: There's lost of cocktails on the table. Jamie Walker from Bombay Sapphire Gin has prepared a 'plethora' of cocktails (Walker's words, not mine). The Chfes will be pairing an appetizer for their drinks. Full access to the pantry. They're off!

Hung doesn't like this challenge. Hard alcohol doesn't mix well with his elegant, high-end food, he tells us. And the judge agrees...NICE! As he goes around, many of the chefs appear to have impressed.

Least favorite - Joey, Hung (Hung, "I'm thinking he was a little confused - that's why I called him out." - with

Who did well - Casey, Tre & Dale - Casey is the winner - and receives immunity.

Elimination Round: The chefs divide themselves into teams of three - and each of them will be making a dish, using the same ingredients. Brian decides to do it by random lottery.

That sytem doesnn't last long, as the teams start breaking down - Casey gets stuck on a team with Howie and Joey. It's getting strategic. There's lots of conflict on this team. Money seems to be a huge issue for this challenge, as most of the teams have to leave ingredients behind.

Casey, "In my mind, I keep telling myself, sometimes in the kitchen you're going to be forced to work with people you don't like."
The menu & teams:
First course - Shrimp - Lia, Hung & Brian: Padma - this is good! Tom - overall, very successful
Second Course - Tuna - Howie, Joey & Casey: Howie isn't convinced this is going to go over well. The dinner guests think it's way overboard, tastewise
Third Course - Filet Mignon - Tre, CJ and Sara - Padma- the presentation is beautiful. The table seems impressed.
Fourth Course - Pineapple - Sara, Dale & Camille - Dale says it would be better if the dinner guest were blind. Why did they choose to do a dessert? The semi-freddo is awful. The desserts are dreadful.

Judge's Table: The more impressive courses - shrimp - but people didn't really like Hung's foam. The judges seem to be coalescing around Brian. But, in a surprise winner is Lia - who will be a guest chef this summer in the Hamptons.

The lower end is comprised of two groups of chefs - Tuna Course & Pineapple Course - half the chefs are put on the chopping block. The desserts were difficult - as most of them have no pastry experience. It was a HUGE risk, according to the judges. They seem to want to punish these guys for rolling the dice. Now, let's target the tuna team - Tom says that Casey's dish was REALLY weak. Casey admits her dish was underseasoned. Casey breaks out into tears over the fact that either Howie or Joey could be sent home because her dish was what put her team at the bottom.

Who is going home? Joey, Howie? Dale, Camille, Sara? The desserts were unsuccessful, all around.

Tom lectures the dessert team. Padma- "Camille, please pack your knives and go."

Top Chef - the Third Course

After watching the first two episodes of my favorite reality shows - Top Chef on Bravo TV - I missed episode three...so, this week, I've got two hours of couch potato-hood ahead of me.

Top Chef - Episode 3: Two down, thirteen remain standing.

Howie: "I don't like Joey, but I'm not here to be liked." Micah: "I'm not a quitter. I'm here to win."

Today's Quickfire Challenge: The guest judge is Alfred Portale of Gotham Bar and Grill in New York, winner of the Beard Award. The ingredients are in an aquarium - piles of seafood. It's called "Catch and Cook" - 30 seconds to fish and then 30 minutes to cook. Hung goes first - and it's clear he's not popular with his fellow contestants.

Padma - "who is going to sink and who is going to swim?"

Cleaning the seafood is time-consuming. No one seems too confident (except our pal Hung). When Hung gets criticized by the judge, he defensively says, "he obviously didn't understand the concept."

The Quickfire Results: Micah, Camille and Tre are the disappointments this week. Favorites: Howie, Brian, and CJ - and the winner of immunity is Brian.

The Elimination Challenge - update the classic American diets in a low cholesterole fashion. The dishes will be served to the Miami Elk's Club Lodge.

On the menu: Sloppy Joe, Franks & Beans, Tuna Casserole, Pork Chops & AppleSauce, Fried Chicken, Chicken a la King - it looks like mom made the menu - although where's the Friday night pizza?

Micah, the foreigner "My reaction to American comfort food: ugggh!"

Dale is making chicken and dumlings...Tom is surprised everyone is doing a literal approach to the dishes. He's not impressed.

Sarah discovers the oven is on "cool down" - and guess who may be the culprit? You guessed it. Hung. Is this on purpose or an innocent mistake? Hmmmm.

Good Lord, CJ's pile of green mush looks horrendous. Let's hope it tastes better than it looks. The judges HATE it.

Sarah's not even sure hers is cooked thoroughly. Again, another horrific presentation. Next up - franks and beans. The seniors do not like it. The lentils aren't even cooked correctly, according to the judges. Three strikes.

CJ comes out and saves the day. Now, we've got Hung with fried chicken, mac & cheese. Sara N has fish & chips. Micah's meatloaf - the consensus is that it's TERRIBLE. It's crunchy.

Brian does lobster and cabbage....is this supposed to be low cholesterol? Casey gets raves for the sloppy joe. The judges appear resoundingly underwhelmed.

Howie impresses - both the judges and the Elks.

Judge's Table - Padma says there are a few surprises and some definite disappointments.
Micah's meatloaf was the dish that kept giving, but not in a good way. Dale scored well with the audience and the judges.

Favorites: Dale & Howie. Padma urges Howie to smile. They're impressed with the Apple Slaw as a replacement for the sauce. And, they're impressed with the dish, despite the instant potatoes on Dale's dish. Howie wins - and he gets to cook at the Gotham restaurant for a week. Wow! This is a good turnaround for Howie, who I thought was going home last week.

The bottom-dwellers include: Micah, CJ, Lia, Sara and Brian (wait, he's got immunity, right?)
Brian gets lectured because he chose to use lobster in a low-cholesterol challenge. Tom urges him to move past the seafood dishes and prove he is capable of more. Micah is combative and defensive regarding her meatloaf. Sara has never had chicken a la king - and her dish had no resemblance to the original dish. CJ's dish failed because it was too green and too muddy in flavors. Lia - did you cook anything? It seemed a little lazy for a dish you had two hours to prepare.

Tom - this was a straighforward challenge.

Micah is asked to pack her knives and go.

Three gone, a dozen remain.

A Second Helping of Top Chef

Episode #2 - America's Top Chef Miami

It's Wednesday night, 10PM and I've settled in to feed my reality TV addiction. Guest Judge this week is Norman Van Aken.

Quickfire Challenge Round is about "Sunshine & Citrus." One thing is certain: the colors on these dishes are certainly going to be brighter than last week's rattlesnake and liver.

There are two contestants - Hung and Tre - who are already rubbing me the wrong way. They're exuding confidence and they've decided they're the two favorites in the competition. Hung reinforces my dislike when he says of the other contestants in the Quickfire round, "I looked around the kitchen and I saw some 'slummy' dishes."

Quickfire Results:
The Bottom Three - Sara, Sandy, and Micah (she won last itme)
Top Three - CJ, Hung and Tre (shit, maybe they are the favorites) and Hung wins, and he graciously says, "I was thrilled & I didn't expect anything less." The dislike deepens.

The Sunshine Theme continues with the Elimination Challenge - the thirteen chefs will be cooking at a champagne bbq party thrown by Lee Schrager., South Florida's premier party planner and caterer.

On the menu: Brian is doing his 'seafood sausage' - which raises eyebrows among the competitors. Tre, who plans a salmon dish steps up to vie with Hung for the title of most arrogant in Miami by declaring, "I'm a serious competitor and I don't lose."
Sandee is doing a lobster panchetta..hmmm, as a barbecue?

Meanwhile, Micah is grumpy- is it the loss in the quickfire? or does she miss her daughter? Hung, again winning sympathy points comments, "don't use your daughter as an excuse as to why you're crying." Can this guy really be this obnoxious? Or are the producers manipulating me into disliking this guy?

Sara is using scotch bonnets hot peppers that are making her hands burn. She's never prepared them before and is surprised at how spicy they are. Now, this doesn't seem like a wise move. Prep time ends, they're off to the posh digs to get some sleep before tomorrow's big competition.

The BBQ is poolside. They've got two hours to fire up the grill and prepare their dishes. Sara has never started a barbecue. These people are chefs?

Lead Judge Tom Caliccio stops by to check in on the contestants. The only one exuding confidence seems to be ....Hung.

Sandee doesn't seem to be using the BBQ - Chef Tom is worried she might be "trying to put lipstick on a pig." That's not a good sign.

And the guests show up. Micah seems to have impressed. Lia serves cilantro shrimp with couscous. CJ has a NY Steak with baked pineapple. Brian has done well with the seafood sausage, as witnessed by the sizeable crowd gathered around his grill. Tre- peach bbq glazed salmon. A woman response is "bleeped" out. Hmmm. Maybe he's not as talented as he believes he is? Howie's dish tastes like sawdust. Doesn't look good for Howie.

Hung serves flank steak with grilled corn salad. Joey throws a fit that Hung 'has stolen' his watermelon shooter drink.

The BBQ ends and we're heading to the Judge's Table.

During the commercial break, the interactive text question this week is announced: Who is this season's biggest drama queen? Micah, Joey, Hung or Howie. Well, if it was, "who do you like least?" I might consider voting.

Judge's Table - the consensus seems to be that all the food was good. Hung was having a blast today. Tre's wasn't impressive. Sandee's wasn't really BBQ.

Favorite's include Brian's seafood sausage. Sara's dish was "two perfect mouthfuls." Micah impresses, too. They're the Top Three. Who wins? Brian captures the idea of an upscale barbecue. He's relieved and excited after last week's finish in the bottom four.

The bottom four, facing elimination this week: Howie, Joey, Sandee and Tre.

Wait - Tre? Haven't we been told he's one of the favorites?

Why are they here?

Tre - my dish was salty. Chef Tom lets him know some guests thought it was either underseasoned or oversalty. No consistency in the dish.
Joey - Padma asks: "What were you thinking?" The dish was missing the 'upscale' component required in this challenge
Sandee - is shocked she's here. Tom tells here she didn't BBQ. The lobster only tasted like vanilla butter. It didn't meet the challenge.
Howie - maybe my dish was a little too simple. And the pork was dry. It wasn't my best day. I haven't cooked to my potential yet. My money is on Howie being sent home this week. He barely escaped last week.

Who should go: Joey names Howie. Howie lashes back. Catfight ensues in the kitchen. The profanities start flying.

Meanwhile, the judges center on the idea of the challenge - and upscale BBQ. Sandee didn't BBQ. Joey's dish was BBQ - it wasn't good. Howie shot himself in the foot tonight. What's the bigger sin? No BBQ? Or not upscale enough?

In the end, Padma utters the dreaded words, "Sandee, Please Pack Your Knives and Go."

When You Crave Top Chef

The third season of America's Top Chef started Wednesday night. After two seasons on the West Coast (SF & LA), the Bravo reality series moves east, to sunny South Beach.

"Bienvenido a Miami!"

My television viewing is typically limited to news, sports, CSI and Law & Order (gotta get my fix of Freddy Thompson as the fearless Arthur Branch). My blogging usually focuses on political topics. But, I've got this addiction to "America's Top Chef" and I thought I'd deviate from my normal blogging fare, if only to prove how much of a renaissance man I am.

Not sure why I find Top Chef so interesting - I'm not a cook. My culinary skills consist of pushing buttons on a microwave. Perhaps that's the reason. These chefs are asked to cook under pressure and deliver beautiful and tasty (at least they look delectable) dishes. It could be I'm searching for a new recipe for the anxiously anticipated DKos KookBook.

Or perhaps it's the knives and wide assortment of other sharp instruments in close proximity to conniving (yet extremely talented) contestants fighting for money, prestige, a trip to Aspen and the title of "America's Top Chef". It's a recipe for pure entertainment.

Let the back-stabbing begin!

We're told at the start this year's group of contestants are more talented and accomplished than the previous two seasons. We are introduced to them as they gather for a cocktail party at the Versace Mansion on Ocean Drive. Nice digs.

As they're relaxing and getting to know one another, in walk judges Tom and Padma - and they've got a surprise in store. The first Quickfire challenge starts now! And the contestants are asked to create an "amuse bouche" with the leftovers from tonight's cocktail party. And they've got ten minutes. Come on, boys and girls, get to it!

Well, Micah wins with her "Tuscan Sushi Revisited." Christ, this woman not only throws together this beautiful morsel with figs, fish and who knows what else but she has a friggin name for it too? Come on. You gotta be kidding me!

Up next is the Elimination Round where the fifteen contestants get to create a surf and turf with a twist. What the hell is on that table? There's Alligator Tail and Rattle Snake, Eel and Geoduck. Sounds like what little boys are made of. Seriously, what are they going to do with that? Uhm, Geoduck? (pronounced "GOOO- eee- duck")

Oh, they're creating a surf and turf with exotic ingredients. Our contestants are preparing an exotic menu: Snake and Eel, Kangaroo & Abalone, Alligator & Monkfish Liver. And I have to ask again, "What is Geoduck??" (pronounced "GOOO- eee- duck")

All in all, the contestants impress the judges. Although guest judge Anthony Bourdain observes of one dish, "I would like this if I were drunk" (One gets the impression Tony has spent many a night perched on a barstool and knows barfood when he sees it). Another dish he deems barely worthy of being served by Air Cambodia. Not sure, but I don't think it was meant as a compliment. Padma derides one of the chefs who tried to explain his decision to fry rattlesnake and eel, "You could fry my toe and it would taste good." Again, not a compliment.

Did I say it was the backstabbing contestants providing entertainment? I meant to say the JUDGES. Yeah, that's it.

The Judges agree - Tre and Hung have excelled - and Tre's dish wins the first elimination round. This ratchets up the pressure on Tre, as the winner of the first elimination round in the previous seasons has gone on to win the entire contest. Can he make it three for three?

There are four chefs who end up in the bottom group - Howie, Brian, Clay and Dale. Clay, the self-described darkhorse from Mississippi, who underwhelemed the judges in the Quickfire doesn't seem to grasp he's prepared (and served an inedible dish. He doesn't have an answer when the judges ask, "Do you know why you're here?"

Well, the judges couldn't either. Clay becomes the first contestant to hear the dreaded words, "Please pack your knives and leave."

Meanwhile, back at the suite, the other fourteen are sharpening theirs.

Oh, and for those of you wondering, geoduck is a shellfish and it's found in Puget Sound. It remains a mystery as to why it's pronounced "GOOO- eee- duck".

See? I'm a 21st Century Renaissance Man.
